No-Dough Blueberry Peach Cobbler
(Adapted from a Southern Living recipe)

Oven at 350 degrees

1.  Melt in a 2 1/2 qt. dish:
     1/2 c. butter (oil can be substituted or butter/oil mixture)

2.  Combine in medium bowl and set aside until syrup forms:
     2 c. fresh peaches
     2 c. fresh blueberries
     1/4 - 1/2 c. honey or fructose

3. Combine in small bowl:
     1 c. whole grain flour of choice (kamut, wheat, spelt)
     1/2 c. honey
     2 t. baking powder
     1/2 c. milk, dairy or non-dairy

4.  Stir until just mixed.  Set aside a few minutes until batter gets puffy.

5.  Spoon batter over butter.  DO NOT STIR.

6.  Spoon fruit over batter.  DO NOT STIR.

7.  Bake at 350 degrees for 40 - 55 minutes depending on fruit.  Be careful not to overbrown crust.       Other fruits work well like:

apples with cinnamon
blackberries
cherries
pears
all peach
all blueberry etc.
