Whole Wheat Pumpkin Muffins
Preheat oven to 400
degrees.
Oil 24 muffin tins.
1. In large bowl
mix:
1 c. honey or
pure maple syrup
1/2 c. oil
3 eggs
1 1/2 - 2 c.
pumpkin (I use 2 c.)
3/4 c. water
2. In small bowl
mix:
3 1/2 c. whole
wheat or Kamut flour (4 c. spelt flour)
1 1/2 t. baking
powder
1 t. baking
soda
1 t. salt
1/2 t. cloves
(opt.)
3/4 - 1 t. cinnamon
1 t. nutmeg
3. Add dry ingredients to wet and mix lightly.
4. Add if desired:
1 c. soaked
raisins, drained
1 c. walnuts,
chopped
5. Fill muffin tins 2/3 full and bake at 400 degrees for 15 minutes.
6. Remove from tins to cool.
This batter will also make 2 loaves of bread instead of muffins. Both freeze well.
