SW White Chili   (Serves 6)

1.  Saute for 4-5 min. until chicken is done:

    2 T. olive oil
    1-1/2 c. chopped onions
    4-6 cloves fresh garlic minced
    2 pounds boneless skinless chicken breast, cut into very small chunks

2.  Stir into chicken and onion mixture and simmer for 30 minutes:

    2 c. chicken broth
    1/2 - 3/4 c. chopped jalapeno peppers or green chilies, to taste
    1 tsp. garlic powder
    2 tsp. gr. cumin
    1 tsp. oregano
    (cilantro to taste if you have it)

3.  Stir in and cook for 10 more minutes:

    40 oz. can (4 cups) great northern beans, drained
    salt to taste if you are using your own dried, cooked beans

You can garnish with shredded monteray jack cheese.
