Tofu Burgers   (Serves 6-8)

*preheat oven to 350 degrees
*wrap drained tofu in a clean dish towel to absorb extra water

1.  While 1 lb. of firm tofu is wrapped saute vegetables in oil:
     2 T. olive oil
     1 c. chopped onion
     2 c. chopped celery*
     2 c. carrots, finely grated*
2.  Cream wrapped tofu until smooth.  I do this in a food processor
with the following ingredients:
     1 c. whole wheat flour
     3 T. soy sauce
     2 t. baking powder
     1 t. poultry seasoning
3.  Blend tofu mixture into vegetables and add:
     2 c. cooked rice or millet  (leftovers work great)
4.  Spoon 1/3 c. tofu mixture onto greased cookie sheet and flatten to 1/2".
Bake 15 minutes.  Turn and bake 10 minutes or until desired crispness.
Serve like you would hamburgers.
*any combination of chopped vegetables works well.
