Tofu "Fish" Fillets

Preheat oven to 350 degrees.  Serves 4 - 6

1.  Wrap in clean towel to absorb extra moisture for at least 30 minutes:
 (this step is optional, but I do it anyway)
     1 1/2 - 2 pounds firm tofu, cut into 1/4" thick slices

2.  Prepare breading mixture:
     2 c. fine bread or cracker crumbs
     1 T. nutritional yeast (optional)
     1/2 t. garlic powder
     1/2 t. onion powder
     1 t. powdered kelp or other salt-free seasoning (or salt)

3.  Brush or dip tofu into:
     olive oil or melted butter

4.  Dip tofu into breading mixture and coat well.  Place breaded slices on an oiled cookie sheet and bake for 20 minutes, until filets are golden and crisp.

Serve with tarter sauce or ketchup by themselves or on a whole-grain bun.
