Tofu Ricotta  (makes 2 1/2 - 3 c.)

1.  Crumble in medium bowl:
     1 lb firm tofu
2.  Add and blend well by hand or in a food processor:
     1/3 c. olive oil
     1/2 t. nutmeg
     1/2 t. salt or seasoned salt
Use in lasagna or baked spaghetti recipes.  No one will guess it is tofu!
